Pascal Jolivet is one of the youngest yet most dynamic wine makers in the Loire Valley. He started the production of the Grand Vins du Val de Loire in 1982, however, later founded the house of Pascal Jolivet in 1987. He specializes in the wines of Sancerre and Pouilly-Fume which have very quickly gained international recognition and fame. Now, today, Pascal has round 70 acres of vineyards in the two premier appellations of Sancerre and Pouilly Fume, bolstered by 50 percent purchased fruits, Pascal Jolivet produces classically styled Liore Wines. He firmly believes that wine making should be left to nature and seeks to tame the dynamic nature of the Sauvignon Blanc. He uses steel tanks and allows the grapes to ferment separately to ensure development of character and expression. These wines are great in the Vietnamese Climate because whether red or white they are all fresh and light. |
