Mr. Jeevan Thomas

Food and Beverage Director

Jeevan has 20 years of experience working with some of the leading resorts and business hotels in India, Dubai, Oman, Maldives and Vietnam. He Joined Evason Ana Mandara in 2007 in the position of Executive Chef and in 2011 took over the position of F&B Director as well. Jeevan has brought a wealth of knowledge in Mediterranean cooking styles together with his Asian roots, into our dining offerings. Always on the lookout for exciting products and concepts, he has involved himself in creating the exciting food & beverage experiences for our guests

Mr. Michael Bao

Executive Chef

An Iron Chef of Vietnam 2013 cooking competition, Michael Bao Huynh has joined Evason Ana Mandara as Executive Chef. He is one of the world’s most celebrated Vietnamese chefs with unique and sophisticated concepts. In 2001, Huynh opened his own restaurant in New York and was voted one of the Best Chefs in 2003 by New York magazine. Opening Mai House restaurant he won Best Restaurant from the New York Times in 2007. After 30 years, the passion for his native homeland brought him back to Vietnam and to Evason Ana Mandara.

Mr. Chau

Cocktail Expert

Our cocktail expert Mr. Chau has been honing his skills in mixology for the past few years. With his 15 years of experience with mixologists in some of the best resorts in Vietnam, there is rarely any cocktail that he has not added his personal touch to.

 

His signature drinks are classic cocktails given a Vietnamese punch, leading to tropical exotics. Have a chat with Mr. Chau and he will compose the best out of a mélange of ingredients, while gladly sharing his knowledge and passion for the mixing secrets of his cocktail creations.
