The bar & restaurant offers a fresh and trendy design, where the beachfront and poolside location are a colorful backdrop to innovative cuisine. Open from 6:30 am to 10:30 pm daily, the restaurant is open to the public and is the perfect dining venue on one of Vietnam’s most idyllic beaches.

Every Friday a colorful food market is set up in the courtyard of the Pavilion restaurant, celebrating the variety of delicious Vietnamese food, with many life cooking stations. Enjoy Nha Trang seafood dishes, the influence of ancient royal cuisine and indulge in the famous beef and pork dishes of the north with traditional dance and music performances.

Mr. Derek Watanabe

Executive Chef

Thirty five years old Derek Watanabe brings talent, experience and enthusiasm to his position of Executive Chef at Evason Ana Mandara Nha Trang.

His responsibilities include overseeing the oprtations of the resorts’s two restaurants in addition to the banquet facilities. Outside catering and stewarding.

Derek’s culinary career started in 1981 in Honolulu with his last position there being at the Kahala Hilton before he moved to Coloradoin 1984. In 1989, he joined the Four Seasons Los Angeles as Senior Sous Chef, before coming to Asia with The Regent Jakarta as Restaurant Chef. Prior to his promotion to The Regent Resort Chiang Mai, he was Senior Sous Chef at The Regent Hong Kong for one year.

Born and raised in Hawaii, in 1987 Derek acquired an Associate of Applied Science in Business Administration and in 1989,he attended the Culinary Institute of America in New York and qualified as an Associate of Arts in Occupational Studies.

Mr. Anton Maier

Food and Beverage Manager

Anton joined Evason Ana Mandara in July, 2014 with an extensive background in hotel food and beverage management that has taken him to countries like the USA, the UK, Bhutan, and his home nation of Austria. 

As he adjusts to the heat of Nha Trang, he looks forward to offering more guest experiences around the resort's ever-growing wine selection and overseeing the opening of the brand's first beachfront lounge, late 2014.

Mr. Andy Vu Quang Diep

Restaurant Manager

Andy Vu Quang Diep has been appointed as restaurant manager of Ana Beach House Bar & Restaurant at Evason Ana Mandara. He brings six years of experience in restaurant management to the role, having previously owned and operated Kiko Sushi Bar and Quan Viet Fusion in Ottawa Ontario, Canada.

Andy is delighted to lead the restaurant’s very passionate and knowledgeable service team, who constantly strive for excellence and to provide truly memorable dining experiences at the Ana Beach House Bar & Restaurant.
