Signature Restaurant

An intimate natural setting overlooking picturesque Ninh Van Bay. A dining performance that showcases local produce, top quality meat and seafood for dishes at the culinary forefront. 

Dining by the Pool

Lunch Dining

Serving Vietnamese and Western dishes, the lower floor overlooks the main pool, while the top floor provides uninterrupted 360° views. Open for lunch and seasonal themed buffet dinners.

Drinks by the Bay

Evening Bar

The perfect place to enjoy an aperitif at sunset or after dinner drinks. Furnished with comfortable daybeds and bar stools, the bar remains open each evening until the last guest departs.

Vietnamese Cooking Classes

Recipes, method and equipment are all explained by our Masterchefs at our Vietnmese and Fusion cooking classes. You then get to enjoy the lovely dishes with a glass of wine.

The Cave is an authentic hillside rock cavern; a unique setting for a very intimate dinner, as the ambient lighting and the cosy atmosphere set the tone for that special occasion.

Jeffrey Heng

Executive Chef

Jeffrey’s philosophy is to create pure, simple and modern dishes reflecting the food Jeffrey grew up with. He creates dishes using only the freshest produce sourced locally and by his own hand.

 

Jeffrey gained extensive knowledge about herbs and flowers, with particular emphasis on how to use key creative ingredients to enhance dishes. This in depth learning motivated Jeffrey to continue to cultivate an extensive garden at Ninh Van Bay. Jeffrey’s career has had a great start, with many notable achievements contributing from his past roles.

Mr. Tuan

Vietnamese Sous Chef

Having an impressive history of preparing wonderful dishes at Ninh Van Bay for more than seven years, Mr. Tuan embraces every aspect of Six Senses with his love for nature and sustainability.

 

Mr. Tuan is a master of Vietnamese cuisine which makes good use of the abundance of natural ingredients in every touch.

 

He works his culinary magic to turn his garden lunches into fascinating stories of refreshing combinations, flavours and aromas.

Khun Win

Head Sommelier

Win started his career in his native Myanmar, before moving oversees to the Middle East where he joined The Ritz Carlton Doha. He then joined Six Senses Zighy Bay and Soneva Fushi, Maldives where he was appointed Resort Sommelier.

 

Win’s love and passion for wines accelerated his development, resulting in his extensive qualifications through the UK's Wine and Spirit Education Trust. Win oversees a world-class wine list, has an understanding of food and its delicate relationship to wines giving him the ability to amplify guest’s culinary experiences.
