Lunch Dining

Serving Vietnamese and Western dishes, the lower floor overlooks the main pool, while the top floor provides uninterrupted 360° views. Open for lunch and seasonal themed buffet dinners.

Drinks by the Bay

Evening Bar

The perfect place to enjoy an aperitif at sunset or after dinner drinks. Furnished with comfortable daybeds and bar stools, the bar remains open each evening until the last guest departs.

Jeffrey Heng

Executive Chef

Jeffrey’s philosophy is to create pure, simple and modern dishes reflecting the food Jeffrey grew up with. He creates dishes using only the freshest produce sourced locally and by his own hand.

 

Jeffrey gained extensive knowledge about herbs and flowers, with particular emphasis on how to use key creative ingredients to enhance dishes. This in depth learning motivated Jeffrey to continue to cultivate an extensive garden at Ninh Van Bay. Jeffrey’s career has had a great start, with many notable achievements contributing from his past roles.

Lalith Chandana

Chef de Cuisine

Chef Lalith orchestrates the dining experience at By The Rocks. His passion in creating dishes is drawn from getting to know his audience. He engages with guests and learns about their palette and food preferences, and tunes his instincts to create dishes that delight and surprise, using the freshest local ingredients.  He has worked alongside a veritable who’s who of culinary greats, from Michelin-star chefs such as Raymond Blanc, Christian Lurtard, Carlo Gracco, Rene Redzepe and Thomas Rode Andersen, the list also includes Nic Watts from Zuma and Roka, Takamura from Nobu.

Chef Phuoc

Chef de Cuisine

Excitement, experience, and education radiate from Chef Phuoc. With a breadth of five-star background throughout his home country of Vietnam, Phuoc wishes to show the world the endless possibilities of the local cuisine. Combining his understanding of many Asian cuisines, fusion is his favourite; combining flavours, methodology, ingredients and passion into each of his meals.

 

Guests can learn some of his personal cooking techniques during cooking classes, following a guided tour of the resort's extensive organic garden.
