Sustainability requires thinking globally and acting locally. For this reason, 0.5 percent of revenue goes towards a dedicated Sustainability Fund, which is exclusively aimed at supporting community-based environmental and social projects that benefit the local community.

We work closely with local organisations dedicated to urban rewilding, planting, and the protection of pollinator corridors: green pathways threading through London that offer bees and butterflies a safe space to rest and refuel.
The butterfly is our mascot. Central to our sustainability story, it reflects both the beauty and fragility of England’s native pollinators. Guests can choose from four knitted soft toys inspired by British butterfly species, the Large Blue, Brimstone, Purple Emperor, and Green Hairstreak. Each of these represent species under increasing threat in meadows, woodlands, and urban green spaces.
Proceeds from every purchase directly support ongoing conservation and rewilding initiatives, helping protect habitats and encourage biodiversity where it’s needed most.

The culinary team sources authentic, ethical, and sustainable ingredients primarily from local UK producers, prioritizing freshness while reducing environmental impact. Menus are plant-forward, designed to support health and nutrition while delivering bold, satisfying flavors. Close relationships with suppliers help minimize unnecessary packaging and support reuse programs wherever possible.
The goal is to source more than 80 percent of ingredients from the UK, including partners such as SHRUB, a small-scale purveyor working with 45 farms nationwide; Orchard Eggs, a biodynamic farm in East Sussex; The Estate Dairy, which uses kegs and closed-loop containers; Hodmedod for pulses and grains; and Fin & Flounders in Brixham, providing fish raised without antibiotics or hormones. Cheese is sourced from UK producers using British milk, supporting regional farming communities.
